The ingredients needed to cook Mango Kulfi:

  1. Provide 4 cups of full-fat milk.
  2. You need 2 cup of fresh mango pulp(Alfonso preferably).
  3. Prepare 1/4 tsp of saffron strands.
  4. Provide 1 tbsp of warm milk for soaking saffron.
  5. You need 2-3 tbsp of almond powder.
  6. Prepare as required of Pista slivers for garnish.
  7. Take 5 tbsp of sugar or depends upon the sweetness of mangoes.
  8. Take 1/4 tsp of cardamom powder.

Steps to make Mango Kulfi:

  1. Combine the saffron and the warm milk in a small bowl, mix well and keep aside..
  2. Heat the milk in a deep non-stick pan and boil on a medium flame, stirring occasionally..
  3. Let it reduce to half Keep stirring and mixing the skin formed on the top..
  4. When it’s reduced to half add sugar and almond powder and mix well and cook on a slow flame for another 10-15 minutes, while stirring occasionally and scrapping the sides..
  5. Switch off the flame and allow the mixture to cool completely. Once cooled, add the mango pulp, saffron-milk mixture and cardamom powder and mix well using a whisk..
  6. Pour the mixture into kulhads and freeze overnight..
  7. Serve chilled with wooden stick.
