The ingredients needed to make Sweet Potato Barfi:

  1. Prepare 1/2 kg of Sweet Potato (boiled and mashed).
  2. Take 3-4 tbsp of beetroot juice.
  3. Prepare 400 gm of Milkmaid.
  4. Prepare 4-5 tbsp of Desicated coconut powder.
  5. Take 2-3 tbsp of Ghee.
  6. Take 1/2 tsp of Green Cardamom powder.
  7. Get as needed of finely chopped nuts (Almond, Cashew nuts).
  8. Take 8-9 of Raisins.
  9. Prepare as needed of Pistachio to garnish.

  1. Boil, peel and mash shakarkandi.
  2. In a heavy bottom pan add ghee, add shakarkandi and cook 4_5 minutes..
  3. Add beetroot juice and cook few minutes, then add milkmaid, green cardamom powder, desicated coconut powder and cook few more minutes..
  4. Keep on cooking till it starts leaving the sides of pan and changes into a lump..
  5. Take off the flame, put in the greased plate and spread to form a uniform layer..
  6. Garnish with pistachio, cool it and cut into desired shape.
