- Get 1 kg of shrimps,i use small size.
- Take 1 tbsp of palm sugar.
- Get 2/3 tbsp of tamarind puree.
- Provide 1/2 tsp of salt.
- Use 1 tsp of sugar.
- Prepare 1/2 tbsp of soya sauce.
- Get 1 tbsp of thai chili sauce.
- Prepare 2 tbsp of sriracha sauce.
Instructions to make Kanya's Crispy Shrimps:
- Clean shrimps in runny water ,drain well.
- Cut the head by scissors.
- Stir in large sauce pan until pink ,water disolved.
- Add seasoning except sricha,stir on medium heat until all sauce coated all shrimps..this may turn little sticky,heat off ,remove to the bowl.
- Add sriracha sauce,mix well,now bake shrimps until shells crispy ,but still juicy inside,approximately 6 to 8 mins ,flip on half time depend on your shrimps,so check it after 4 mins ,then flip.
Pat the shrimps dry so the breading adheres well. My favorite breading mix is three parts flour and one part cornstarch which delivers a light yet very crispy texture. This creates a light yet crispy coating. Be sure to deep-fry the shrimp twice for extra crispiness that will stand up to the sauce. For a spicy kick, I used dried hot peppers to make chili infused oil, but you can use commercially prepared chili oil and/or fresh green/red hot peppers instead.
