The ingredients needed to prepare Brighter Than Sunshine:

  1. Prepare of eggs.
  2. Use of small green capsicum (sliced).
  3. Prepare of bunashimeji mushrooms (100g), separated.
  4. Get of stewed & herbed tomatoes (approx 400g).
  5. Take of cumin powder.
  6. Provide of chilli powder (optional).
  7. Get of Drizzle of oil.
  8. Get of Sprinkling of salt & pepper.

Instructions to make Brighter Than Sunshine:

  1. Pre-heat oven at 180C (gas mark 4)..
  2. Prepare all your ingredients beforehand..
  3. Slice and spread mushroom and capsicums into baking dish. Drizzle oil and toss in salt & pepper..
  4. Bake for about ~10mins or until the vegetables are almost roasted through. (Lightly browned around the edges).
  5. Take the dish out if the oven. Layer on the tomatoes, sprinkle all herbs on top and mix well..
  6. Make 4 small wells in the sauce and crack in the eggs..
  7. Put back into the oven and bake for another 10-15 mins or until the eggs begin to set (whichever is preferred)..
  8. Take out of the oven and serve with bread of choice. :).
