  1. turn broiler on.
  2. combine bread crumbs, Parmesan, garlic and parsley in small bowl.
  3. Heat heavy bottomed skillet to med high.
  4. add oil, let oil heat up for 2 minutes.
  5. add butter..
  6. Once butter starts to brown, add steak. Leave the steak alone for 3 minutes, flip, and for the love of god don't flip it again for 3 more minutes..
  7. remove steak and cover one side with mustard..
  8. smother that beautiful steak (mustard side) with the breadcrumb/Parmesan mixture. pat it down nice and firm.
  9. slide it into the broiler for a couple minutes. or until nice and brown.
  10. take it out and LET IT REST!! Give it 3 minutes. Now you can eat..
