Instructions to make Watermelon Cookie Pie:

  1. Mix all the ingredients together one, after the other, after sieving the all-purpose flour and beating the eggs separately.Please note that I did not add the flour in batches but added everything together..

  3. Pre heat the oven at 165 degrees Celsius and bake for 15-20 minutes/ Until done. Please note that as this is a cookie Pie/ it will not be soft as cake/ neither hard as Biscuits..:).
  4. Divide the whipping cream in portions adding the food color and decorate the same to look like a Watermelon. I did not use any nozzles and went with very basic decoration techniques. Garnish with choco chips. This can be served as is, along with a scoop of ice cream.

Fold gelatin mixture into the dessert topping. Lightly press miniature chocolate chips into each slice to resemble watermelon seeds; if desired, add sesame seeds. While still warm, cut each cookie in half or into pie-shaped wedges. Remove to wire racks to cool. In a large bowl, cream together the shortening, butter, and sugar with an electric mixer until fluffy.
