  1. Brown meat with cumin and taco seasoning until cooked through and no longer pink.
  2. Cut up peppers and leeks rinse well add to meet mixture.
  3. Drain and rinse black beans add to mixture.
  4. Add stewed tomatoes chipotle salsa and tomato sauce stir well.
  5. Once mixture has come to a boil pour half of the mixture into a 11 by 13 baking dish..
  6. Layer meat mixture with six of the corn tortillas add some shredded cheese repeat meat mixture add the remaining six corn tortillas cover with remaining cheese bake in oven uncovered for 30 minutes at 350°F.
  7. Once casserole has cooled dollop sour cream on top of each serving.
